Suggestions for the best salad for…?

Serving at an AUstralian Christmas lunch… Any recipes please?

BILLY CAN PUDDING from AUSTRALIA

In the Australian bush in the 19th century people had to improvise. The Billy Can is a tin, with handles, usually used to carry water.

1 1/2 cups of raisins
1/2 cup of sultanas and raisins
1 cup sugar
1/2 teaspoon of mixed spice and cinnamon
2 cups flour
1 teaspoon of bicarbonate soda

Combine all ingredients. Mix well with 500 mls of boiling tea. Empty into a greased and floured billy can. Cover, amd let it stand overnight. Steam for 3 1/2 hours.

COLONIAL ‘GOOSE’ from AUSTRALIA

1 leg of lamb
75 g fresh breadcrumbs
75 g chopped bacon
8 tablespoons finely chopped onion
1 teaspoon finely chopped parsley
1 teaspoon mixed herbs
Punch nutmeg
1/2 teaspoon lemon rind
Salt and pepper
1 beaten egg
Milk

Make an incision in fleshy part of leg. Mix all ingredients well. Stuff the lamb and tie up with string. Roast 15-20 minutes per half kg.

CHRISTMAS DAMPER from AUSTRALIA

2 cups of SR flour
1/2 teaspoon of salt
2 teaspoons sugar
1 tablespoon butter
1 cups milk or water (enough to make a medium or soft dough)
1 teaspoon of bicarbonate soda

Rub the butter into the flour. Knead. Mould into a Christmassy shape – a wreath, or a star. Bake in hot oven (or in ashes if you are cooking it in a fire). Cook for 20 minutes until brown. Serve with butter and jam, honey or golden syrup.

DROVER’S PLUMB PUDDING from AUSTRALIA

250 g rice
Sweetened water
Sugar
125 g raisins or sultanas
A handful of nuts

Put rice in saucepan of boiling, sweetened water and simmer until no water is left. Add remaining ingredients. Sweeten to taste.

WHITE CHRISTMAS from AUSTRALIA

3 cups rice bubbles (Rice Krispies)
1 cup mixed fruit
1 cup dessicated coconut
1 cup dry powdered milk
3/4 cup of sifted icing
sugar
225 grams colpha
vanilla essence

1. Put 3 cups of rice bubbles, 1 cup of mixed fruit, dessicated coconut, dry powdered milk and 3/4 sifted icing sugar in a bowl.

2. Melt 225 grams copha in saucepan. Add copha to dry ingredients in bowl – mix well.

3. Press mixture firmly into a biscuit tray. Set in a refrigerator. Cut into squares.
