What is the authentic recipe Brutti ma buoni?
I'm doing Brutti ma buoni (ugly but good) cookies tonight. Of the three Italian cookbooks on my shelf that have a prescription, two have to cook the egg whites and sugar / almonds / etc. simmer until thickened, then bake. The other is to go directly from the mixture of sugar / almonds / etc. egg whites in the oven. Looking online, appears to be about halved. So ….. if I want the authentic recipe, would that include cooking the mixture in the oven (for carmelize a little, and thicken I guess), or not? Grazie!
This is a authentic Italian recipe 2 1 / 2 cups (250 g) powdered sugar 1 / 4 pound (100 g) peeled peeled, toasted almonds 1 / 4 pound (100 g) shelled roasted hazelnuts 6 egg whites Pinch A healthy mix of cloves, cinnamon, coriander and a dash of vanilla extract or a few drops of vanilla Grind the nuts until a powder, the ideal would be to use a mortar (the roasting of nuts makes this operation much more successful). If you do not have a mortar, chop the nuts either very finely by hand, or zoom to a powder in the blender, with short bursts to avoid the spinning blades to extract the oil from the nutmeats. Beat egg whites until stiff and carefully times in nuts, sugar, spices and vanilla. Turn mixture into a saucepan and reheat sauce, stirring gently over low heat until thickened and only turns to gold (Or pale brown) in color, which takes about half an hour.
