Feed your family in minutes with this salmon roasted with tomatoes and garlic. Add broccoli macaroni and cheese. You will have a meal of salmon, tomato, broccoli, pasta and cheese in these two dishes. What quick and easy way to feed his family.
SALMON WITH ROASTED TOMATOES AND GARLIC
4 salmon fillets
1 large clove garlic, minced
tomatoes 1 liters grape or cherry
1 1 / 2 tablespoon chopped fresh thyme
salt to taste
2 tsp extra virgin olive oil
freshly ground pepper to taste black
Preheat oven to 425 degrees. Line a baking sheet with foil and spray with cooking spray.
In a medium bowl, mix the tomatoes with the garlic, 1 tablespoon thyme, salt, pepper and olive oil. Spread the mixture onto the prepared paper-lined baking tray and bake for 10 minutes. Remove from oven and press the tomato mixture to a side of the pan. Add the salmon fillets on the other side of the pan, sprinkle with salt and pepper to taste and another half tablespoon of thyme. Return the pan in the oven and bake 10-15 minutes until the salmon is cooked. Remove salmon to serving plate and tomato and spoon juices over.
BROCCOLI macaroni and cheese
1 1 / 2 cups macaroni
2 slices of bacon
1 cup frozen broccoli cuts
2 tablespoons water
1 cup (8 ounces) pasteurized process cheese spread
Cook macaroni according to package directions, drain and set aside.
Meanwhile a place inn 1 1/2-quart casserole bacon microwave. Cover and cook on high 1-2 minutes until the bacon is crispy, drain and crumble. With a paper towel, wipe in the pot. Combine broccoli and water in the pan. Microwave broccoli on high for 3-5 minutes or until tender crisp, drain. Stir in broccoli cheese and microwave for 1 minute. Add the cooked macaroni and a microwave 2 or 3 minutes until hot, stirring once. Sprinkle crumbled bacon on top.
Yield: 4 servings
