Re cold fish and lobster dish?
I was asked to prepare a cold (seafood and lobster) dish as part of a buffet lunch Christmas easy recipe Any suggestion? I am thinking of putting in some kind of sauce or pan gelitine? Any suggestions please – please?
Normally usually do this in the summer. Teriaki Marinate salmon and ginger for about two hours. Ase to let cool, place in refrigerator. steam lobster {or} that divide and make steam meat. In a large bowl to make a bed of romaine lettuce and roasted peppers and maybe whatever. Place the salmon fillet in the dish and the pieces of lobster meat. I make a dressing with two parts rice vinegar to three parts olive oil, a pinch of ginger and terriaki tablespoon. Instead of lobster you can use shrimp or scallops and salmon. And used instead. This salad is always a hit. The lobster division would be nice but you can not have people tear in it, a mess. Usually use shrimp or small bay scallops. Add color with no olives carrots etc. Good luck and happy holidays
