Can someone suggest recipes good ideas for a night of girls?

I have three friends on a night of the week for dinner. Someone is bringing dessert and beverages other, so what we really need are good ideas for recipes, if possible please or just this slightly spicy, with vegetarian options for one of the girls. I usually bottled wonderful but I can follow a recipe, and bake so I have all the basic elements. Not too spicy preferred. This kind of night has become a tradition and give you an idea of what I am after the last two meals were the pasta and chicken dish unique Indian garrisons participating in rice and yogurt (all fabulous). It's winter and quite cold here.

Mexican night: bean burritos (refried beans, jar of salsa, cheese, nuclear) corn chips, Spanish rice (Rice-roni a) black olives, tomato and lettuce on the side of the plate, do not forget the avocado salsa and sour cream. Mexico not have to be spicy. Yummy, Margarita. Ho I '
