What are some of their Christmas cookie recipes favorite?

so far here is my list: Pizella (an Italian anise cookie) bars chocolate peanut butter fudge cookies, almond slice of coffee-flavored cookie bars any other ideas? if you have the recipe that helps a lot too! nothing too difficult. thanks!

Cappuccino Flats cookie recipe 2 oz chocolate, 2 cups flour 1 teaspoon C. ground cinnamon 1 / 4 t. salt 1 / 2 cup plus 1 1 / 2 T. solid vegetable shortening (divided) 1 / 2 C. (1 stick) butter 1 / 2 C. granulated sugar 1 / 2 cup brown sugar 1 instant coffee 1 teaspoon T. water 1 egg 1 1 / 2 C. semisweet chocolate chips Heat unsweetened chocolate in microwave just until melted, cool slightly. In a bowl separate, sift the flour, cinnamon and salt. In a large bowl, beat butter 1 / 2 cup butter until tender. Add sugars and beat until light and fluffy. In a separate bowl, dissolve coffee crystals in water. Add the coffee mixture, egg and melted chocolate to the butter mixture and beat well. Gradually add flour mixture and mix well. Cover and let stand in a bowl 1 hour. Shape into two 7-inch rolls, wrap in waxed paper and refrigerate several hours or during night. Cut into 1/4-inch slices and place on ungreased cookie sheet. Bake at 350 degrees for 10-12 minutes or until edges are firm. Cool cookies completely baking rack. A low heat, melt chocolate chips and 11 / 2 remaining tablespoons shortening. Dip half of each cookie in chocolate sauce and place on waxed paper until chocolate is set. Makes about 50 cookies. It can be stored in the freezer.
