Creamy wine sauce…How to?
Yesterday evening I made a shrimp scampi recipe posted on foodnetwork. I thought the sauce to the recipe was nice and wanted to tamper with it a bit by adding some heavy whipping cream. The sauce consisted of white wine(I use Reisling), shallots, garlic, juice of one lemon, and I added a few scallions. Do you think heavy whipping cream can be added to this sauce to go over fish or simply with shrimp and pasta. I was reading online that the lemon juice may cause the cream to curd.
I was looking to make the extra sauce today and add it to the leftovers. What do you think??

That amount of lemon juice is likely to curdle the cream.
However 2 or 3 tablespoons of cream might be ok, experiment a little and see what happens.
