I am looking for an easy (and healthy!) Recipe cold pasta salad. Can you help me?
I prefer something with olive oil and / or vinegar instead of mayonnaise, like cold pasta salad I always see on salad bars. It tastes like Italian dressing could have? I would like to learn how to make a recipe similar. If you have shrimp, even better!
The trick for any pasta salad is as follows …. What you have in your fridge? pasta salad is easy, and yes, most restaurants use a vinaigrette dressing or prepared. You may make one or buy it already made. My family uses only olive oil and spices. Here is my recipe for pasta cooked … (2 cups or less) olive oil salt and pepper, minced garlic, a clove of parsley 1 / 4 teaspoon fresh mint, chopped celery seed, 1 / 2 teaspoon lemon zest 1 / 2 teaspoon (if you do not have lemon zest, lemon pepper will do) broccoli florets, cut small red, green and yellow peppers (mmorefor color so you can use either, but the red are the sweetest) red onion, chopped (optional) tomatoes, halved 1 carrot good size, grated zucchini, diced (can also use cucumber) black olives, 1 / 4 cup Parmesan cheese just combine everything together and sprinkle cheese on top. If you want to add chicken or shrimp, you can, just cut the chicken into small pieces or use the popcorn style shrimp (you can buy in the frozen food section of the grocery store and cooked).
