Proper recipe for Tagliatelle carbonara …?

I want an authentic Italian recipe from scratch (no need to explain how to make the pasta). I have experienced and I have pretty close but not quite there. It's my favorite dish I get the nail.

Tagliatelle alla carbonara for 4 people Preparation time less than 30 minutes Cooking time 10 to 30 minutes Ingredients 1 tablespoon extra virgin olive oil ½ oz 300g/10 slices of ham, cut into strips about 1 cm / 100 g ½ wide / Oz 3 ½ oz unsalted butter, white wine 150ml/5fl 6 egg yolks 50g/2oz freshly grated parmesan, plus extra for serving 50g/2oz sheep years freshly grated salt and freshly ground black pepper 350g/12oz egg noodles Method 1. Heat olive oil in a heavy saucepan. Add two thirds of prosciutto and fry for a minute. 2. Add 50g/2oz of the butter to the pan and allow to melt, then add wine and simmer for 2-3 minutes only to combine with the butter and the juice prosciutto. 3. Place egg yolks, parmesan cheese and cheese in a bowl and season to taste with salt and freshly black. 4. Cook the noodles according to package directions or until al dente, drain, reserving a few tablespoons of cooking water. 5. Immediately add pasta to the mix of ham, then add the egg mixture – the heat of the pasta will cook the egg. 6. Add the reserved cooking water if sauce seems too thick, then add ham and reserved the remaining butter. 7. To serve, spoon on warm plates and sprinkle with a little Parmesan.
