Good recipes for vegetarian food from a mother?

Hello, my mother is a vegetarian and I need to know some good recipes. Do you have any idea? I I am vegetarian so I have no idea what to do. I can cook well, but I am not a chef. So any recipe at all would be well if you are vegetarian, I'm just going to make me some chicken skewers. It is the job if I did it on a George Foreman grill? Thanks yall.
