Angel hair pasta with chicken and vegetables makes a big dinner Busy Week Night

ANGEL HAIR PASTA WITH CHICKEN AND VEGETABLES

2 tablespoons of olive oil, divided

2 skinless chicken breast halves of chicken, diced

1 carrot, cut into 1 inch pieces

1 package (10 ounces) frozen broccoli florets, thawed

2 cloves garlic, minced

12 oz angel hair pasta

2 / 3 cup chicken broth

1 teaspoon dried basil

1 / 4 cup grated Parmesan cheese

Yield: 4 servings.

Hot 1 tablespoon oil in a medium saucepan over medium heat. Add chicken to hot skillet. Cook, stirring, until chicken is cooked through. This should take about 5 minutes. Remove from skillet and drain on paper towels. Heat remaining oil in same skillet. Put water on the fire to cook the pasta according to directions package. Add carrots to skillet and cook, stirring, for about 4 minutes. Add broccoli and garlic to the skillet the carrot and cook, stirring, for a couple of minutes.

Cook the pasta. While pasta is cooking, add the chicken broth, basil and parmesan cheese to the mixture from the pan. Stir to combine all ingredients. Return chicken to skillet. Reduce heat and simmer for 4 minutes.

Drain pasta and place in large bowl. Top with chicken and vegetable mixture. Serve immediately while hot.
