ITALIAN SPAGHETTI
1 pound hamburger
1 medium onion
2 peppers green
1 ½ teaspoon salt
1 tablespoon fat
½ pound spaghetti
Mix meat, onion and green pepper. Add salt. Form meat
into small balls and fry until golden brown. Make a sauce with the following:
½ cup chopped onion ¼ cup cheese grated
2 green peppers ½ cup ketchup
Passed through a sieve quarter tomatoes 1 tablespoon paprika
½ cup sugar ¼ teaspoon mustard
¼ teaspoon salt 1 cup chopped celery
Mix all the ingredients for the sauce and let simmer 1 ½ hours.
Add the meatballs and simmer 1 hour. Cook the spaghetti in salted water
until tender. Drain.

Stir occasionally. Remove bay leaf. Serve hot over spaghetti.
Top with Parmesan cheese.

CHICKEN ARTICHOKE PASTA
1 pound boneless, skinless chicken breasts cut into small pieces
1 (141/2-oz.) Cans basil, garlic and oregano flavored diced tomatoes
1 (6 oz) jar marinated artichoke hearts, drained and coarsely chopped
1 (2.2 oz) can sliced black olives, drained
1 / 2 pound of angel hair pasta
In a lightly oiled skillet over medium-high heat, saute the chicken until cooked through. Transfer to a plate.
In the same pan, prepare the pasta according to package directions.
Add chicken to sauce and toss to heating. Add drained pasta and stir to coat.
Makes 4 servings.
POLISH PYROGY
Everybody loves this dish. You could eat one every day.

5 cups flour
2 cups warm water
1 tablespoon salt
4 tablespoons oil
3 eggs
1 tablespoon vinegar
Mix flour and salt.
Mix the eggs, oil and water to make 2 cups.
Make well in flour mixture add water.
Mix well then knead. (As you knead, the better)
Roll dough flat thin and cut into squares 2-3 inches
Put filling (below) in each seal the border, and to pinch-purpose flour
closes.
FILLING
Puree potatoes.
