Alternative Cilantro Pesto in southwest pasta dish?
I'm wanting to make a lasagna-style dish southwest tomorrow night, but the recipe cilantro pesto calls (which are made of fresh cilantro, pumpkin seeds, jalapeno, garlic, lemon juice and Asiago cheese). Nobody that I am serving with coriander like, so I'm looking for either an alternative ingredients in pesto sauce, pesto or alternative style that retains the southwestern feeling. Have a suggestion? If is important: The recipe calls for 2 / 3 cup pesto sauce, divided between four servings. The lasanga also contain grilled zucchini, red pepper, corn, spinach, ricotta, Asiago, Monteray making cheese and homemade tomato sauce smoke. I will allow fulfilling pumpkin muffins on the side. Thanks for your comments and suggestions! I'm looking for something that does not maintain a southwestern feel an Italian pesto recipe. I lived in Italy for two years (and went to the home of pesto, Liguria) and I know all about Italian pesto!
I see the other person gave a suggestion of a mixture of Italian pesto. You simply can substitute basil or cilantro rocket or even a bit of fresh parsley. Hope that helps!
