Anyone Want To Share?
A quick, easy, healthy recipe for children to eat as meals that you came up with? Or is a well-kept secret? I feel like sometimes I feed my daughter the same foods over and over again and am looking for variety. She especially loves cheese, pasta, chicken, and fresh fruit, but is not a big fan of plain veggies (depends on her mood).
I have a good one if your daughter likes pasta sauce. It hides the broccoli very well.
Broccoli stuffed shells
1 C ricotta cheese
1 egg
2 C chopped cooked broccoli (or if you feel more comfortable with frozen use a 10 oz. package)
1C mozzarella cheese
1/4 C grated parmesan cheese
1 jar spaghetti sauce
Buy a package of jumbo pasta shells (about 20) and cook as directed. Combine all other ingredients except for the pasta sauce. Stuff cooked shells with the cheese/broccoli mixture. Lay shells in rows seam side down in 13×9 ” casserole dish. Top with spaghetti sauce and sprinkle additional parmesan cheese if desired. Bake at 350 degrees for 30 minutes covered until hot and bubbly.
I’m sort of sad to give that recipe away, but it’s probably pretty standard. Anyway I like this one because you can hide the broccoli really well and it tastes great. I usually put my broccoli in a food processor so it’s SUPER fine. My kids have no idea that broccoli is even in the recipe!
