A Question for Vegetarians and Vegans Everywhere: What are YOUR favorite recipes?

Okay, I recently became a lacto-ovo vegetarian a few months ago. Sometimes its hard for my mom to make me something vegetarian because we’re a Mexican family and she makes me the same things every week. To help Mom out and to try out some new dishes, i was thinking of experimenting with Vegetarian Cuisine. I already have two cookbooks but i’m asking you guys: What are some of YOUR Favorite Vegetarian Recipes? I’m looking for just about anything but specifically something good to take to school for lunch and anything that can be served at a party (for my friends to try out).

Okay this is a good one! It is very simple and I loved it.

*Make sure you have tortilla wraps or tacos or what ever else you want to use.

*Get some veggie meat crumbles

But I guess since you are lacto-ovo you can use dairy cheese.

*And last but not least get some diced mixed veggies. I got one pack filled with onions, tomatoes, and all kinds of peppers.

~Directions

What I did was put the veggie crumples in a little bit of water, maybe 2 or 3 cups. Stir periodically.
While it is heating up grate some cheese. I used a lot but it depends on how cheesy you want it.
Then after grating the desired amout of cheese throw the veggies in with the crumbles and stir it together.
As the water starts to get low add the grated cheese and stir it in until completly melted. It shouldn’t stick at all but too be sure get a non stick pan and stir often.
Once it is nice and hot warm up your tortilla wrap or whatever up and fill it up!
I used exactly 10 wraps with all of it so it should be enough for left overs! Hope you like it, I loved it!
