How to make quick and easy seafood dish salads

When you need a quick and easy salad entry, if you enjoy seafood, give these recipes a try. Tuna Stuffed Peppers are easy to make a beautiful presentation and are ideal for a quick, light lunch. Angel hair Shrimp salad combines two favorites, pastas and shrimp in a large bowl of salad that is perfect for lunch or light dinner.

QUICK AND EASY TUNA PEPPERS STUFFED

2-3 peppers, depending on size
1 can (12 ounces) tuna chunks, drained
2 tablespoons light mayonnaise
2 Tbsp Italian
1 / 4 cup finely chopped celery
lemon wedges for garnish, if desired

Cut peppers in half vertically, remove seeds and veins. In a small bowl, combine tuna, mayonnaise, Italian dressing and diced celery. Divide tuna mixture evenly among the pepper halves. Garnish with a slice of lemon, if desired.

SHRIMP SALAD pumpkin

2 1 / 2 cups cooked angel hair pasta (about 5 ounces uncooked)
3 / 4 cup tomatoes
1 / 2 cup chopped red pepper
1 / 2 cup yellow pepper
1 / 3 cup chopped green onion
2 tablespoons fresh lemon juice
1 tablespoon black olives
1 tablespoon olive oil
1 1 / 2 teaspoon chopped fresh thyme
1 / 2 teaspoon pepper freshly ground black pepper
1 / 4 teaspoon dried oregano
3 / 4 pound cooked medium shrimp, peeled and deveined
1 clove garlic, minced
1 / 2 cup crumbled feta cheese
1 tablespoon chopped fresh parsley

In a large bowl, combine the angel hair pasta, tomato, red pepper, pepper yellow, green onion, lemon juice, olives, olive oil, thyme, black pepper, oregano, shrimp and garlic. Sprinkle with cheese and fresh parsley.

Yield: 5 servings, 2 cups each.
