Old-fashioned recipes for Baking in cold winter days

Now that winter has set in and with it the long, cold and often rainy or snow days, it's time to heat your home and home with some delicious baked goods. Here's a good selection of recipes from my vintage collection that would perfect for making with children or alone just to share later. The Applesauce Raisin Muffins would be good after school snacks, lunchbox items, or breakfast is a hot drink and some yogurt for protein. Mint cookies are great for the children and remind the famous Mint Girl Scout Cookies. The Wafer Cookies Lacy Oatmeal cookies are called Havreflarn Swedish in Sweden. They are simple but luxurious. How about letting the kids help you make granola bars at home can have as treats or take in their lunch boxes. Children love to eat something they helped make. So the flour, sugar, etc, don an apron and start working on that oven!

HOME Granola Bars

3 1 / 2 cups oatmeal
1 cup chopped walnuts
1 cup raisins
2 / 3 cup melted butter
1 / 3 of cup honey
1 egg, beaten
1 / 2 teaspoon vanilla
1 / 2 teaspoon salt
1 / 2 cup packed brown sugar
1 can of cherry filling cake

Place oats in a jellyroll pan and toast in oven at 350 degrees for 15 to 20 minutes, stirring occasionally. In a large bowl, mix oats, nuts and raisins. Melt the butter in a saucepan. Add the honey, egg, vanilla, salt, brown sugar and pie filling. Add to the mix of oats. Press firmly into greased pan Jelly Roll. Bake 25 to 30 minutes at 350 degrees. Cool, cut into squares.

QUICK AND EASY MINT COOKIES

This recipe was passed out at an open house at Christmas a local florist in southern Indiana for years. These cookies are very simple and to remember the "Girl Scout Mint Cookies.

Melt 1 pound semisweet chocolate coating. Add 6 drops of peppermint oil and stir well to mix flavors. Dip Ritz crackers until well coated and place on waxed paper lined cookie sheet to set. Store in an airtight container and store in a cool place until ready to serve.

LACY OATMEAL wafer cookies

This is a cookie recipe from Sweden. It is known as Havreflarn in Sweden.

Preheat oven to 375 degrees.

1 / 2 cup butter
1 / 4 cup sifted flour
1 / 2 cup sugar
3 / 4 cup quick cooking oats
2 tablespoons cream

Melt the butter in a medium saucepan. Add flour, sugar, oatmeal and cream. Cook, stirring constantly, just until the mixture begins to bubble. Remove from heat and stir vigorously for a few seconds. Drop by rounded spoonfuls onto 4-inches apart on greased and floured baking. Place 5 or 6 cookies on a tray oven at a time. Bake at 375 degrees five to six minutes until golden brown. Wafers for 2 minutes Cool in pan. Carefully remove baking sheet with a spatula thin and place on a roll until firm. If cookies harden before you can remove from skillet, heat in the oven for a few seconds to soften again. Makes about 2 1 / 2 dozen.

Applesauce RAISIN MUFFINS

1 large, gg

2 tablespoons vegetable oil

1 1 / 2 cup unsweetened applesauce

2 cups flour

3 / 4 teaspoon baking soda

2 teaspoons baking powder

1 / 2 teaspoon nutmeg

1 / 2 teaspoon cinnamon

3 / 4 cup raisins

Beat the egg, oil and mashed apple. Add the flour, baking soda, baking powder, nutmeg and cinnamon, beating well. Add the raisins. Spoon batter into greased and floured. Bake at 375 degrees for 20 to 25 minutes or until firm to the touch and browned. Cool on wire racks. Delicious with cream cheese!

Note: This is a soft, spicy cake. Very good.
