Pasatelli recipe?
Hi I am looking for a good recipe for pasatelli. The only thing I can find online is a molto mario, and I will not use that. I used way too much butter. I once used the lemon zest in the batter, but I lost it. I would also like people have tried and will like … Any help would be great … thanks!
1-1/4 cups bread crumbs 1 cup Parmesan cheese, a little more to serve two tablespoons of butter melted Pinch of freshly grated nutmeg 3 eggs, slightly beaten 4 cups beef broth (or broth) salt Combine bread crumbs, Parmesan cheese, melted butter, nutmeg, eggs and a pinch of slat int a bowl. The mixture should be quite strong, if too soft add more bread crumbs. Bring people to a boil in a pot. Keep a potato masher with holes big enough and press the bread crumb mixture through it to the short form shaped dumplings of worms. Serve grated Parmesan cheese.
