This question is for Italian chefs only.?
I'm not Italian, but having lived with an Italian family for some years, I really like Italian cuisine, especially the sauce that came with the pasta. Here's how they do. Please tell me if my prescription will meet your satisfaction. Brown 2 pork chops in olive oil, 2 cloves of garlic, add 2 cans of crushed tomatoes, 1 can tomato sauce 1 or 2 cans tomato puree 2 bay leaves, 1 teaspoon of sugar, maybe a pinch of oregano. Simmer for a couple of hours. Sometimes I bracioli (meat in cubes wrapped with thinly sliced garlic and laced with thread) and brown the chops. Mmmm. What would a few do anchovies?
Sounds like a pretty decent sauce. I can do something similar – I got my grandmother and my mom. I was not going to cook the anchovies in the sauce …. but as a pretty involved in the meat and sauce on top. Now that's Italian!
