Name the mystery Italian soup!!?
I was in Italy a few weeks ago and in one of the restaurants there I was served a traditional soup as a starter. I cannot for the life of me remember it’s name but it was delicious – I was hoping an accomplished Italian cook could advise of the name?
It was vegetarian, and had white beans in it (maybe cannelini?), celery, shredded greens and some other veg, all in a clear(ish) broth.
If anyone has any idea what it could be called, please do let me know – it was fantastic and I’d love to find a recipe and try it at home!
