Trying to make a vegan cake GOOD?
I became a vegetarian at the beginning of this year and since then I have not been able to make a decent vegan cake. I have also tried baking vegan cookies and learned so stupid! I think it has something to do with the flour I use. I, the King Arthur flour is organic whole. The cake it is not sweet and the icing was disgusting! I tried to raw can sugar and turbinado sugar, what should I use? Does anyone know of a vegan cake and cake icing prescription. I've tried vegcooking.com and those are gross.
Here is a good recipe for the cake and a cookie recipe. Do not use WHOLE WHEAT! Chocolate Cake: 3 cups flour 2 cups white sugar 1 / 2 cup cocoa powder 2tsp baking soda 2 cups water 1 teaspoon salt 1 / 2 cup + 2tsp canola oil 2 tablespoons cider vinegar Sider 2tsp vanilla Bake at 350 for 45 minutes. Frosting: 1 / 2 cup shortening nonhydrongentated (I use Spectrum shortening all.) 1 / 2 cup nonhydrongentated Margine (Balence land) 3 1 / 2 cups powdered sugar (sifted if clumpy (1 1 / 2 teaspoon vanilla extract 1 / 4 cup plain soy milk soy cream 1. Beat shortening and margrine together until well blended and fluffy. Add sugar and beat for 3 minutes on. 2. add the vanilla and soy milk, and beat for 5-7 minutes until the biscuits in August: 2 1 / 4 cups flour 1 teaspoon baking powder 1 / 2 teaspoon salt 1 cup vegan butter (Earth Balance) 1 cup sugar brown 1 / 2 cup white sugar replacement for 2 eggs. I can use 2 heaping tablespoons of applesauce chocolate chips (as many as you like) Combine flours, baking soda, salt in a bowl. Mix and set aside. In a bowl beat the butter and sugar until well blended. Add applesauce and vanilla and beat until very creamy. Slowly add the flour mixture until combined (but not over mix.) Mixture of chocolate chips. 375 for 8-10 minutes or until done.
