I need help and suggestions about the cuisine of the East India please?

My office is married to a man have come from the East Indies by 2 days. He is a Hindu and believe that a vegetarian. I have some food for him at lunch because there is no where in Montana you can get food from the Eastern India. I have a cookbook with some recipes, but is difficult to translate the names of things like lentils and ours. I need to know whether you can replace something more for things like asafetida and Anardon (dried pomegranate seeds). One last question, would it be an insult to a man in the area of Mumbai, which was served the food of northern India, or does it matter? Thanks went to the health food store and found a whole section in East Indian cooking. Some things are Instant … only heat in the microwave, so I got a couple of those to be carried to his motel. I take the floor in Roti bread for him and mix a little fresh vegetables with rice too. This guy has been a fun adventure for me. I used to be a vegetarian for many years. Thak you all for your help.

I do not think a man of Mumbai have a problem with the food of northern India. There is no substitute for asafetida as I know. It tastes very bitter, and only used only a pinch of it on a plate. It definitely adds more flavor to the dish, but if you do not, do not worry. do everything possible. I am sure they will appreciate your consideration.
