tasty vegetarian gnocchi recipes?
i’ve never tried gnocchi before, but the other days i bought a packet when shopping and really want to try making it. does anyone know any good recipes for a nice sauce to go with my store-bought gnocchi? i never really like jars of pasta sauce that you can buy as i find them a bit fake and salty tasting so want to make this all from scratch. oh and also i’m a vegetarian so meat-free suggestions would be much appreciated

A tomato sauce like the recipe Amy gave is good – especially if you are vegan. Another option for a vegan sauce is to bake some sort of squash e.g. butternut squash – cut in have, remove seeds and add a little olive oil and some herbs and pepper – bake until soft. Remove from oven, allow to cool, scoop contents into a bowl or blender and puree. If too thick, add water. In addition to ‘sweet’ spices e.g. cinnamon, allspice etc. going well with squash – Italian herbs also go well and fried sage leaves are a nice edible garnish.
The simplest garnish/sauce of some olive oil and fried garlic (or onions or lemon peel or pine nuts….) these all go well too
Any sort of cheesey sauce goes well if you are lacto-ovo vegetarian. If you have a veggie pesto recipe this goes well. Finally, if you have access to lots of fresh herbs, I often just pick herbs and infuse them in some gently warmed cream and use this as a sauce
